Ashok is a third generation coffee producer on his beautiful Ratnagiri Estate. The farm saw a significant leap in quality after investing in modern agricultural technology in 2000. Key improvements included installing stainless steel tanks for anaerobic fermentation, ventilated greenhouses for drying, tiled surfaces to prevent acid formation during fermentation, a dry milling facility, and an ECOpulper that cuts water usage by 65%. They also introduced innovations like yeast inoculation and rigorous pre-processing cherry sorting with Brix content analysis.

Ratnagiri Estate pushes Indian specialty coffee forward through innovation and sustainability. Quarterly soil tests guide organic adjustments, while ionic seawater and seaweed extract boost plant immunity and increase cherry sweetness.

Their facilities include a bioprocessing unit, ozonator, climate‑controlled drying chamber, microbiology lab, and cupping room—each supporting strict quality control.

“Ratnagiri,” meaning “Pearl Mountains,” refers to the silver oak canopy that shades the vibrant, flavour‑dense coffee and gives the hillsides their distinctive, organic character. We’ve been working with his coffee for over 10 years and it’s been very satisfying to experience consistent quality evolution delivered by Ashok’s team.
