I’ve been geeking out on coffee for nearly 15 years — from PIDing single boiler machines and home roasting, to running production, QC, and sourcing at a large specialty coffee company. It’s been a rewarding journey filled with constant learning and amazing friendships.
The specialty coffee world truly is something special — a place where coffee drinkers can connect to the incredible journey coffee takes, and to the hardworking producers who make it all possible. At Nikai, we believe in transparency and education as foundations for sustainability. Paying fair prices — agreed directly with producers or with importers who share this philosophy — is not only essential for ensuring great coffee keeps coming, it’s also just the right thing to do.
Coffee producers already face huge challenges, from natural factors like soil and climate to human ones like economics and bureaucracy. Paying less than the cost of production simply isn’t sustainable — and won’t keep producers in business.
We take quality seriously — and let data guide the cup. We use lab tools with strict protocols to monitor green and roasted coffee: roast color, moisture content, water activity, density, and more — all to ensure the end result meets spec.
